Advent Calendar – Day 23 – Two Ingredient Fudge

Janette Bright (IHR, PhD Candidate) has submitted a recipe that has been a godsend! Christmas can be a very busy period when we are trying to squeeze in as much cooking as possible. In fact, I feel like most of my cooking takes place around this time. Seeing Janette's recipe was a welcome surprise for those that enjoy cooking a quick homemade snack.

Ingredients
  • 397 g condensed milk
  • 300 g chocolate chips (most recipes say milk chocolate, but I prefer dark and it worked for me.)
  • Optional
  • 1 tsp vanilla extract
  • fruits
  • mini-marshmallows
  • sprinkles
Instructions
  1. Mix the chocolate chips into the milk and put in the microwave for 30 seconds (full power).
  2. Remove from the microwave, stir and repeat.
  3. On the second removal, if the chocolate is not completely melted try another 10-15 seconds and repeat if necessary.
  4. Pour into a baking dish or tin lined with baking parchment and leave to set in the fridge for about an hour and a half.
  5. Remove and cut into small squares.
